Healthy 4th of July BBQ Side-Dishes
Need a healthy side-dish for that 4th of July BBQ?
This is my all time favorite side dish from Soupplantation / Sweet Tomatoes with a healthy twist to it.
– Joan’s Broccoli Madness
Ingredients:
3/4 C Fat Free Mayo
2T Splenda
2T Apple cider vinegar
1/2 medium onion
3 crowns broccoli
1/2 C Raisins
1/4 C Cashews
6 strips turkey bacon, cooked and crumbled
Directions:
Mix together dressing- mayo, splenda, vinegar and chill for 1 hour.
Rinse broccoli in cold water to crisp, chop onions, and combine dry ingredients.
Toss salad together and chill for 1 hr or overnight.
Here are some other simple ideas:
– Watermelon
– Salads (watch the dressing… the calories will add up fast!)
– Corn on the Cob
– Fruit Salad (Apples, Pineapple, Bananas, Oranges diced and mixed together)

I love good ole corn on the cob with maybe a bit of butter and parmesan cheese, and you can’t forget the Tabasco! 😀

I love corn on the cob. I will have to try it with parmesan cheese and tabasco sauce. Never done that before.

Hmmm. Even though it’s no longer July this dish was delightful. I did leave out the Splenda however, it still tasted good. And replaced the mayo with veganeese. It’s interesting how nuts and raisins can totally transform simple vegtables, eh? I have to review a lot of Healthy Side Dishes</a because I work for better recipes and this combination is definitely a winner. Kudos!
